Peanut caramel turtle

These little bites are so simple to make, and they’ll please everyone. The hardest part of this recipe is:

1) Wait for it to freeze so you can eat it and
2) Be able to put the chocolate before they all disappear from the freezer.

I’ve got little mice passing in my freezer when they smell the homemade caramel.

These little bites are delicious straight outta the freezer and will keep perfectly in the freezer in an airtight container. I haven’t been able to figure out how long they keep, they disappear way too fast!

Peanut caramel turtle

Ingredients

Caramel

  • ½ cup natural peanut butter
  • ½ cup maple syrup
  • ⅓ cup cocoa butter
  • 2 tsp vanilla
  • ¼ tsp salt
  • ½ cup grilled peanut, chopped

Coating

  • 1 cup of chocolate (chocolate chips or chocolate bar) (175 g)
  • 2 tsp coconut oil

Instructions

  • In a small pot over medium heat, whip the caramel ingredients except for the chopped peanuts until boiling. Close the fire and mix with the chopped peanuts.
  • Put in the freezer for 30 minutes until de caramel binds. Put a timer to avoid forgetting it in the freezer.
  • Line a baking sheet with a parchment paper.
  • Fill a spoon with caramel and empty it on the parchment paper with another spoon to form a bite. Repeat until the caramel is empty
  • Makes approximately 30 bites.
  • Put in the freezer for 45 minutes.
  • When the bites are frozen, melt the chocolate and coconut oil in a water bath.
  • Soak each bite of caramel in the chocolate.
  • Put back in the freezer until the chocolate has hardened.
